So, here are a few recipes, from me to you, to assist you during the upcoming festivities.

The Mackerel & Pineapple Curry, reminiscent of Nyonya cuisine, is a delightful dish that combines the sweetness of pineapple with the savory flavors of mackerel, creating a meal that is both easy to prepare and bursting with flavor.

Here's a simplified recipe for the Mackerel & Pineapple Curry:

  • In a pan, heat 1 tablespoon of vegetable oil over medium heat.
  • Add 1 chopped onion and 2 minced garlic cloves, cooking until they are translucent.
  • Stir in 1 pack of Ayam Brand Fish Curry Paste and 1 teaspoon of turmeric powder, cooking for another minute.
  • Add 1 can (425g) of Ayam Brand Pineapple chunks and cook for 2 minutes.
  • Pour in 1 pack (200ml) of Ayam Brand Coconut Milk and bring to a simmer.
  • Open a can of Ayam Brand Sardines in Tomato Sauce (425g) and gently add the sardines along with the sauce to the pan. Simmer for 5 minutes.
  • Season with salt to taste and garnish with fresh cilantro. Serve with steamed rice or roti.

For those who crave something a bit more indulgent, the Sardine & Tomato Pasta Bake is a fusion dish that combines pasta, sardines, and cheese, resulting in a comforting meal that looks as impressive as it tastes. 

Here's a simplified recipe for the Sardine & Tomato Pasta Bake:

  • Boil pasta according to the package instructions until al dente, then drain and set aside.
  • In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté chopped onion and garlic until soft.
  • Stir in 200ml of marinara sauce and 1 teaspoon of dried basil, then let it simmer for 5 minutes.
  • Open a can of Ayam Brand Sardines in Tomato Sauce (425g), flake the sardines, and mix them into the sauce.
  • Preheat the oven to 180°C (350°F). Mix the cooked pasta with the sardine sauce, transfer to a baking dish, and top with ½ cup of grated mozzarella and ¼ cup of grated Parmesan cheese. 
  • Bake for 20 minutes, or until the top is golden and bubbly. Garnish with fresh basil before serving.

Here's the simplified recipe for the beloved Sardine Curry Puffs.

  • Heat 1 tablespoon of vegetable oil in a pan and sauté ¼ cup of chopped onions until they are soft and translucent.
  • Add 1 tablespoon of curry powder and ½ teaspoon of turmeric, cooking for another minute.
  • Mix in mashed potatoes and the entire can of Ayam Brand Sardines in Tomato Sauce (425g). Stir well and cook for a few minutes until everything is combined.
  • Remove from heat and add chopped cilantro.
  • Cut puff pastry sheets into squares and place a small amount of the filling on each square.
  • Fold the squares into triangles and seal the edges.
  • Brush the tops with beaten egg for a golden finish.
  • Bake on a baking sheet at 200°C (400°F) for 15-20 minutes, or until they are puffed and golden brown.
