Ramadan and Hari Raya Get a Culinary Makeover with Aussie Lamb | Six culinary schools recently faced off in the Lambassador Challenge, celebrating the art of cooking with Australian lamb for Ramadan and Hari Raya. Hosted at the University of Wollongong, Glenmarie, the event challenged participants to craft innovative yet traditional sharing platters using only 12 ingredients, with lamb as the star.
Crowned champions were Muhammad Fikri Bin Kamaruzaman and Muhammad Nazhan Bin Noor Hisham from Kolej Komuniti Chenderoh, mentored by Chef Khairul Ashikhin. Their winning dish featured an Aussie Lamb Stroganoff with Asian flavors and a Duo Beef Buttermilk with Aussie Dendeng, earning them RM1,000 and a certificate.
The University of Wollongong Malaysia team, led by Chef Eric Siew, secured second place with Kambing Salai Masak Lemak Cili Api and Kerutuk Kebabas, receiving RM800. RichTalents International College claimed third with Grilled Aussie Lamb paired with Strawberry Sambal Kicap and Curry Mashed Potato, winning RM500.

The competition aimed to highlight Australian lamb’s versatility, encouraging participants to balance tradition and modern culinary techniques. Teams not only cooked but also showcased their creations on social media, a crucial judging criterion to engage audiences and drive awareness of Australian lamb and beef during festive periods.
Judges included Lambassador chefs and industry leaders who evaluated creativity, presentation, taste, and marketing strategies. The event also featured a masterclass in butchery and cooking techniques, further enriching the participants’ experience.
